- 2 lean rashes of bacon
- 2 slices multigrain bread, toasted
- 3 cherry tomatoes, halved
- 2 tablespoons mayonnaise
- 4 baby lettuce leaves
- salt
- pepper
Preparation:
- Cook bacon in a nonstick pan till golden-brown and crisp
- Drain it on a kitchen towel
- Spread the toast with mayo
- Arrange bacon, tomatoes and salad
- Season to taste
- Top with another slice of toast
